This is a dish that is popular in Northern Thailand, and Lobo Kao Soi Seasoning Mix adds authentic and interesting flavour. A very easy and very tasty meal that is popular with everybody.
Heat oil in skillet and add Kao Soi Seasoning Mix. Stir until aromatic and add soup stock.
Add sea crabs, carrots, green peas and baby corn. Stir until all ingredients are cooked and well blended.
Slowly pour non-sweetened, condensed milk in and continue until boiled.
Add eggs and stir until cooked. Sprinkle green shallots, Chinese celery and chilli. Stir and remove.
Prior to cooking, clean crabs thoroughly and remove all dirt and green algae.
Remove the abdomen, shell and gill cleaners. Chop into pieces and crack the arms just a little for the convenience of diners.
Use high heat to retain the freshness and the succulence of the crab and the vegetables.
